Mushroom Flan with Walnut Pastry

For the pastry:
200g refined spelt flour
A pinch of salt
75g butter
15g walnuts, toasted and chopped finely
1 egg yolk
30-45ml water

For the filling:
30ml olive oil
25g butter
4 shallots
2 garlic cloves
500g mushrooms, either mixed varieties or lovely Somerset field mushrooms
10ml chopped thyme
Grated zest of a lemon
Handful of chopped flat-leaf parsley
1 egg yolk
150 ml double cream
100ml milk
50g parmesan
Salt and pepper


1) Sift flour and salt into a bowl and rub in the butter until it resembles fine breadcrumbs.
2) Stir in the walnuts and gradually add the egg yolk and enough water to form a soft dough.
3) Wrap in cling film and chill for 30 minutes.
4) Roll out pastry and line a 23cm loose-bottomed tart tin with baking paper and beans (to hold pastry down).
5) Bake blind for 12 minutes in a 200C oven.
6) Remove paper and beans and bake for another 5 minutes until the pastry is lightly coloured.
7) For the filling, heat the oil and butter in a large frying pan and gently cook the shallots and garlic.
8) Add the mushrooms and cook until they are beginning to soften and release their juices.
9) Stir in the thyme, lemon zest and parsley and toss together.
10) Season well with salt and pepper.
11) Remove from the heat.
12) Whisk egg yolk, cream, milk and cheese and stir into the mushrooms.
13) Spoon the mixture into the pastry case and bake at 200C for 20 minutes until set and golden.
